Khara/Spicy Shankarpara recipe

Khara/Spicy Shankarpara recipe



Ingredients -
All purpose flour (Maida) - 1kg
Rava - 250 g
Ghee - 4-5 spoon
Red chili powder
Cumin seeds
Carom seeds
Oil for deep fry - ½ Kg
Water - 1 glass
Salt for taste

Recipe steps
1. In a wide bowl take 1 kg maida, 250 g rava, 1 tsp chili powder, 1 tsp cumin seeds and mix it well.

2. Take 1 tsp carom seed, rub it with your hand and add it to the mixture. Mix all mixture well.
3. Heat 2 tsp oil and add into this mixture (This helps to make Shankarpara crispy)
3. Mix all mixture well rub with your hands.
4. Now add water slowly and start to knead the dough. Make a tight dough.
5. Cover the dough with a cotton cloth and wait for 10-15 min.
6. Now take a small portion of dough, knead it well, make a ball as you do while making chapati.
7. flatten the balls and roll them into rounds (make round/chapati of this ball)
8. Once done cut this chapati into desired shapes( squares or triangles) or you can make it into any shapes.
9. Take a pan and add oil into it, heat it over medium flame.
10. Once the oil is hot deep fry these shapes/pieces until it turns light brown in color
11. Once done with all, drain the fried shankarpara on kitchen towel to remove excess all
12. Allow them to cool to room temperature and store it in an airtight container.
13. And your Spicy/Khara shankarpara is ready you can also eat it with tea.

Sweet Shankarpara

Ingredients -
All purpose flour (Maida) - 1kg
Powdered Suger - ½ Kg
Ghee - 4-5 spoon
Oil for deep fry - ½ Kg
Water - 1 glass
Salt for taste


Recipe steps
1. Take a wide bowl. Add 1 kg maida into it. add half kg powdered sugar. (you can add more sugar as per your choice).
2. Heat 2 tsp oil and add into this mixture (This helps to make Shankarpara crispy)
3. Mix all mixture well rub with your hands.
4. Now add water slowly and start to knead the dough. Make a tight dough.
5. Cover the dough with a cotton cloth and wait for 10-15 min.

Ingredients -

Sprouted Matki, Sprouted Ventana - A small bowl, Ginger - 1, Garlic - 4-5 cloves, Coconut, Cumin, Mustard, Red Chili Powder, Garam Masala, Turmeric Powder, Onion - 4, Tomato - 2, frying, bread, lemon.

Pre-Preparation-
1. Wash the sprouted matki and vatana in running water.
In a pressure cooker, add sprouted matki, vatana, one tablespoon turmeric powder,1 tablespoon salt, add 2 glass of water(water level should be half an inch above the matki ) and Cook for 2 whistles. After cooked drain excess water.

2. Heat one tablespoon oil in the pan. after the oil is heated add finely chopped onion into it, let it fried well, add ginger, garlic, coconut into it. let it fries well after that switch off the gas and makes the fine pest of this mixture into a grinder. (you can be used the same pan for making curry so remaining oil will not be getting wasted.)

Recipe steps
1. Add two spoons of oil to a heating pan. Heat oil, add mustard seeds. Let the mustard seed cracked. Add cumin seeds. Add curry leaves.
2. Now add one 1 tsp red chili powder (by adding chili powder in tadaka we will get nice red color curry.)
3. Then add pest of onion, tomato (which is described in preparation section).Stir and saute well until oil comes out from it.
4. Now add 1 tsp of garam masala, 1 tsp of coriander powder, 1 tsp of salt.
5. Now add cooked matki and stir well. add 2 glass of water into it.  Let it cook for 10-15 min on medium flame. when it starts boiling switch off the flame. and your misal curry is ready.

Serving method-
1. Take misal in serving bowl or plate. first, add finely chopped onion and tomato
then top with chopped coriander leaves
2. Squeeze a few drop lemon juice
3. Then top with farsan or chivda
4. serve this bowl in the plate with pav, a slice of lemon, chopped onion.
